Wish to revamp your menu to include healthier options? Needing plant based diet guidance for your patients or clients? Considering a plant based diet? The first steps in adapting to a 100% plant based diet can be challenging – especially in a meat-centric culture. But it does not have to be that way. I developed three specialized and customizable consulting programs to make it easier to take those first steps. The three consulting programs are outlined in the section below. Following an initial interview and intake process, I will do an assessment, develop plans and assignments, provide information and solutions to problems, make recommendations, help with examining/redefining goals, facilitate learning and development of new skills, help with implementation of the diet, work on consensus building and commitment among your team or family, and improve effectiveness in achieving your Plant Based Diet goals.

The basic principle of Lena’s Produce Positive Philosophy is to enjoy life… to enjoy the health benefits and positive vibes that arise from eating and sharing heart healthy 100% plant based foods – and to do so conscientiously and responsibly on a number of levels such as reducing food waste and composting only food scraps or that which cannot be redirected to feed others. What is a heart healthy 100% plant based diet? A diet that forgoes the limited diet of animal products choosing – instead – from thousands upon thousands of plants  grown all over the world and in your local area. A healthy 100% plant based diet can include fresh or dried foods, raw foods, cooked foods, frozen foods, preserved foods, indigenous foods, local foods, your garden grown foods, imported foods, wild foods that are foraged and gathered… all plant foods in all their many forms… fruits, berries,  vegetables, roots, tubers, shoots, fronds, edible flowers and fungus, bulbs, herbs, nuts, seeds, grains, legumes, pulses, fresh, dry beans, leafs, grasses (rice) and more.

In my produce positive philosophy, a heart healthy 100% plant based diet is one that is observant of  fat and oil content, sugar and sodium levels, nutritional content including energy, vitamins, minerals, anti-oxidants, oxygenating properties, water content and more. 

Also in my produce positive philosophy, a conscientious heart healthy 100% plant based diet is also interested in the manner in which food is grown, harvested, prepared, stored, preserved – free of chemicals, nutrient additives, anti-nutrients, hormones, non-GMO and organically grown – when possible – etc.

July 16, 2020 PRNewswire reported “According to a new market research report titled “Plant Based Food Market”, (this) market is expected to grow…to $74.2 billion by 2027.” PRNewswire cites the pandemic for some of the recent interest in plant based diets “this crisis caused people to re-evaluate their diets because it has underlined the link between food, health, and immune responses…COVID-19’s association with animal sources will result in a large population shifting from animal-based proteins to plant proteins due to various health and environmental concerns.”

Restaurants that are currently offering salads, fried vegetables, soy curls, oil and nut based sauces are not doing enough to meet the needs of this health conscious market. Consumers are seeking foods that are truly healthy and energizing. Many restaurants, are responding by overhauling their menus and recipes.

Healthy eating can have a contagious effect. “A single individual can influence the entire table,” said Robbie Wilson of Portland Oregon’s Botanist House in a recent telephone conversation, “I have seen a guest request healthy changes to a dish – that set the tone for everyone sitting at the table.”
